1-Green pumpkin Salad

2-Tortillas/bhalyaan crunch Salad

Green Pumpkin Salad

Ingredients

1-Yogurt half kg

2-Green pumpkin 1 medium size

3-Onion one medium size

4-Capsicum/bell pepper 1 large size

5-Cucumber 1 medium sized

6-Boiled peas  3 quarter of a cup

7-Roasted chicken bite size pieces     half a cup

8-Mint leaves                          4 to 5 (can take dry mint powder as well)

9-Coriander leaves           (a hand full crushed and turned into paste)

Recipe:

1-Grate the green pumpkin

2-Boil grated pumpkin on low heat  to dry its water (don’t add water at all) let the pumpkin boil in its own water

3-Now take a bowl add yogurt and  lightly whisk yogurt

4-Add pumpkin (grated, boiled and dried), diced onion, diced capsicum, diced cucumber , roasted chicken pieces, boiled peas  in the yogurt bowl

4-Add diced green chili

5-Add salt and black pepper to taste

6-Add a few red chili flakes for flavor

7-Add paste of coriander and mint leaves

8-Mix all things well

NOTE: It makes two good servings for two people and three servings of average size for three people. This is an amazing delicious salad for someone who wants to replace wheat or carbs meal with filling salad.

You can make it for your kids who don’t like full meal but you can give them this salad for taste and nutrition.

Tortialls/bhalyaan salad

Ingredients:

1-Tortillas chip thickly crushed/ bhalyaan     half a cup

2-Yougart half a cup

3-Onion one

4-Capsicum/bell pepper 1 large size

5-Cucumber 1 medium sized

6-Roasted chicken bite size pieces     half a cup

7-Boiled peas 3 quarter of a cup

8-Mint leave                          4 to 5 (can take dry mint powder as well)

9-Coriander leaves           (a hand full crushed and turned into paste)

Recipe:

1-Grate the green pumpkin

2-Take a bowl put yogurt and  lightly whisk yogurt

3-Add crushed tortillas chips/bhalyaan, diced onion, diced capsicum, diced cucumber, roasted chicken pieces, boiled peas, in the yogurt bowl

4-Add diced green chili

5-Add salt and black pepper to taste

6-Add a few red chili flakes for flavor

7-Add paste of coriander and mint leaves

8-Mix all things well

This is a very crunchy salad, I add boiled diced potatoes to it as well because a few carbs don’t kill but you can remove or add them according to your choice.

Both of these salads are very filling you don’t feel to have more appetite after eating them, the best part is that they don’t feel heavy either like it happens in case of most aftar dishes.
